The recipe goes back to Haldwani, in the Nainital district of North India, in the 1960s. The late S. Attar Singh Chawla kept refining one of his favourite chicken recipes until it became Cream Chicken, the dish the family's restaurants are still known for. Our online menu lists it as Cream Chicken (Chawla's Signature Dish).

The family recipe uses no red chilli and no vegetable oil. The flavour comes from milk, cream, crushed black pepper and green cardamom, so the sauce is rich and peppery rather than fiery. It comes with bread and mint chutney for scooping up every bit of the sauce.
